Sardinia has two top establishments, one of them is Santadi. The Cantina di Santadi is a cooperative winery. But the management is very gripping and far-sighted. Very early on, they have put on class. The decisive step on the way to top was, however, that Santadi managed to hire a 'wine legend' as a consultant: Giacomo Tachis.
Giacomo Tachis is undoubtedly the oenologist who has given Italian viticulture the most important impetus in the past 50 years. Tachis was for many years the chief enologist of Antinori and as such the 'inventor' of cult wines such as Tignanello, Sassicaia and Solaia. He has made the oak barrique in Italy amenable, he has worked to limit crop yields per plant, he has created wines of high concentration and density, and he has led Santadi to success.
Tachis has always been interested in the grape varieties and the wines of Sardinia, especially Carignano. He was convinced that Carignano is the stuff from which to make great wines. And he proved it with the red wines of Santadi. With Rocca Rubia and Terre Brune he created great wines, which were quickly included in the international 'hit lists'.
